Vegan Beanie Thing :-)

I concocted this recipe today after watching a Vegan video. I don't have a name for the recipe yet, but it is yummy. I also don't have amounts of ingredients listed; I just added ingredients and tasted as I went. Sometimes it's fun to fly blind.

                                                  VEGAN BEANIE THING :-)
Equal amounts of garbanzos and black beans ( I used canned because that's what I had)
Mixed peppers (chopped)
Onion (chopped fine)
Pineapple (chopped)
Walnuts (chopped)
Garlic (diced)
Parsley/Cilantro (chopped)
Herbs/spices: basil, thyme, oregano, celery leaf, rosemary
red pepper, black pepper, salt, turmeric, cumin...
Olive oil
Balsamic vinegar
Mix it all together, chill and serve on romaine leaves. Raw baby carrots were great on the side.
